Join Chef Fabi at Burnt Bridge Creek Cellars Class Cooking for a evening making her favorite childhood Molé Poblano and end the class with tasting the Molé you made! This class will focus on the roots of this iconic Oaxacan dish and teach you exactly how to make it at home for your friends and family! We’ll be making Molé Poblano from scratch, talk about different types of Moles, cover info on sourcing the best ingredients, and get plenty of hands-on time to cook, then eat! Fabi will walk us through all the steps and ingredients in this traditional Mexican sauce that usually includes over 20 different herbs, spices, and chilies.

What to expect:

Class will include all instruction, tools, recipes and ingredients.

There will be some demo, and time for hands-on cooking.

Class will end with a tasting of Molé Poblano with vegetables and poached chicken, and extra sauce can be taken to-go to create your own meal at home.

This class is Vegetarian, Vegan, Dairy Free, and Gluten Free friendly.

Be sure you bring your tupperware for potential leftovers!

Chef Fabi has been teaching cooking classes for over 12 years in the Portland area. She attended culinary school 14 years ago and has worked in many kitchens since but found her love of being a cooking instructor along the way. She studied a variety of savory and sweet cuisines while in culinary school, including Asian cuisine and baking and pastry! Chef Fabi was born in Mexico to a Mexican and Spanish family and learned how to cook from her Mama, Fabiola. She now shares her families recipes in all of her cooking classes with you!

Mexican at Home: Sopes!

Join Chef Fabi at Burnt Bridge Creek Cellars Class Cooking for an evening of classic Mexican antojitos cooking, which means crave-able in Spanish! Sopes are a mix between a taco and tostada made with a thicker corn base and filled with delicious marinaded meat and topped with a assortment of salsas, avocado, Mexican cheese, and so much more! These were Chef Fabi's Mama's favorite little treats!

We'll be making it all from scratch!

What to expect:

Class will include all instruction, tools, recipes and ingredients.

There will be some demo, and lots of time for hands-on cooking.

Sampling the Sopes at the end of class or taking home leftovers. Be sure to bring tupperware!

This class will contain chicken but can be made vegan friendly if you email Chef Fabi first.

This class is dairy free friendly, gluten free friendly, vegetarian, and vegan friendly. You must email Chef Fabi your allergies before class so she can have the ingredients there for your dietary needs.

Just in time for the winter gloom, we’re going to brighten up the wine room with these awesome origami balloon light strands. Come enjoy some Burnt Bridge wine and learn the traditional origami balloon (also called a waterbomb).  We'll make a whole bunch of them using translucent paper and put them on an LED light strand. This First Friday, we are featuring Roxanne Fawcett. She has worked in illustration, ceramics and mixed media. She takes her inspiration from natural world, and paints powerful landscapes, and animals featuring bright acrylic colors.

Chef Kim Mahan and Emilee Mahan will be serving a green salad with a sesame ginger dressing to start, followed by aromatic coconut milk poached shrimp and cod on jasmine rice.
